Food waste management system

Description

Kikleo is a support, management and decision-making tool designed to reduce food waste in restaurants. Kikleo uses a camera, scale and artificial intelligence (AI) in an automated process to quantify the food left on plates by consumers, based on which the restaurant can cut down on food waste and benefit from the subsequent savings.

A small camera mounted next to the rubbish bin in the kitchen or dining room at the conveyor photographs everything that is thrown away, the quantity of food being discarded is estimated using 3D technologies. The collected data is then aggregated on a dashboard, allowing the chef or restaurant manager to see what is wasted each day in the restaurant. The tool makes precision measurements to quantify how much of each ingredient or prepared dish is thrown away. Adding a digital scale to the system can provide greater accuracy.

The Kikleo solution is based on a smart camera, which can be integrated with a connected scale. The camera uses AI to recognize different food types, after which precise measurements of the quantities of food thrown away are confirmed through a volumetric analysis. The Kikleo camera costs between EUR 5000–6000.

Impact

The company claims that Kikleo can provide savings of up to EUR 10 000/year and reduce food waste by more than 50 percent, while contributing to savings of up to 15 000 kg in CO2 emissions per year for an average-sized restaurant. The solution can thus improve the financial performance of restaurants, increase customer satisfaction, and reduce the costs associated with the storage and treatment of bio-waste.
