IT tool for commercial kitchens for the measurement and monitoring of food waste

KITRO is a system combining a scale and camera with artificial intelligence (AI) that allows the measurement and monitoring of food waste to better understand the source of operational inefficiencies in the hospitality sector. Users receive personalized support in understanding the acquired data and in the achievement of sustainability goals. KITRO can benefit operations of all sizes, but especially those serving over 100 meals a day.

Commercial kitchens place their existing rubbish bins on top of a KITRO scale, above which an Internet of things (IoT) device with a camera is mounted, capturing the disposal time, the weight of the waste and images of all the discarded food. The KITRO AI software then uses image processing and deep learning to analyse the acquired data to determine where food is being wasted. The system can be integrated quickly and seamlessly into existing operations.

The standard food waste measurement period is 12 months, with exceptions for seasonal operations that close for a few months per year. KITRO is offered as a subscription-based service, but with monthly rental options (no costs are provided on the KITRO website). Different discounts may be applied depending on the length of subscription, the size of the operation and the number of units required.

KITRO provides customers with detailed insights into their food waste, supporting the optimization of the operation and reductions in waste and outlays, and consequently, a reduced environmental impact. By providing customers with an overview of where food is being wasted and making suggestions on best practices, KITRO can help restaurants reduce avoidable food waste by up to 60 percent and increase their food profit margins by up to 8 percent, while also reducing their CO2 emissions, water consumption and land usage. KITRO’s AI-based technologies were used during the 2020 World Economic Forum to monitor and analyse the waste food produced by the event.
